The world’s tuna farming industry was started in our local waters of Port Lincoln by a pioneering tuna fisherman in the early 90s.

Since then, the demand from the Japanese market for this prized species has resulted in the highest care and respect being shown in every stage of its catch, farming and harvesting. This reduces the stress in the fish and allows the customer to get the most value from the flesh.

With our farmed Southern Bluefin MORITUNA there is as little handling as possible. The fish are wild caught in the Great Australian Bight before being very slowly towed back to the pristine waters of Port Lincoln. MORITUNA are then farmed in large sea cages where they are fed their natural diet to enhance their taste and value.

MORITUNA are harvested using the Japanese iki jime method, the most humane and respectful way to kill the fish, which also preserves the quality.

Sustainability

Certified sustainable with Friend of the Sea, Australia has the most sustainably managed Southern Bluefin Tuna species in the world. Government monitoring and best practice by the fishermen have resulted in Australia having the largest allowable catch for the Southern Bluefin Tuna globally.

The Commission for the Conservation of Southern Bluefin Tuna (CCSBT) determines the Southern Bluefin Tuna quota globally. In Australia these quotas are further monitored by the Australian Fisheries Management Authority.

 

Culinary Experience

MORITUNA is melt in the mouth sashimi-grade product. It is prized by chefs all over the world for displaying exceptional colour and fat qualities – being high in O-toro and Chu-toro fatty meat (pale colour) and Akami (rich red colour).

How to handle

To achieve optimal colour in our MORITUNA, follow these easy steps:

  1. Keep the vacuum pack sealed until ready to use.
  2. Tightly wrap unused portions in food film and store in an airtight container.
  3. Store below 4⁰C.

For optimum freezing, store below -18⁰C. Thaw unopened MORITUNA in cold water (45-60 minutes). Do not refreeze.

 

Tip from our fishermen

For optimum colour presentation, store in refrigerator on a plate covered with cling wrap for 45 minutes before serving.
